homemade pork belly & cabbage dumplings

on a whim I bought a pound and a half of pork belly and it’s been in my freezer - so today I made pork belly & cabbage (+scallion) dumplings! it took a little longer than anticipated because i don’t have a food processor, so i minced the pork belly by hand. it still works; it’s just less incorporated than the typical lumps you see.

also picked up some storebought wrappers from Chinatown – the “northern style” dumpling wrappers are thicker than “shanghai style”
